How to Cook Delicious Bottle Gourd (Lauki) Curry Recipe

Bottle Gourd is also named as lauki. It is very good for health. Some of its benefits according to the indian express article are : good for heart, hair, skin, improves digestion, relieves constipation, aids in weight loss, sleep and reduces stress. So why not have all these health benefits by taking it. Below are the simple steps which anyone can follow and make it at home.  

Ingredients:
  • 1 bottle gourd, peeled and cut into cubes
  • 1 potato, peeled and cut into cubes
  • 1/2 cup peas
  • 1 onion chopped
  • 1 tomato chopped
  • 1 dry red chilly
  • 1.5 tspn mustard seeds 
  • 1 tspn cumin seeds
  • 1 tspn cumin powder(spice)
  • 1 tspn coriander powder(spice)
  • 1 tspn vegetable masala or garam masala(spice)
  • 1 tspn red chilli powder (spice) 
  • 3 tspn ginger garlic paste(spice)
  • .25 tspn turmeric powder(spice)
  • 1/2 tspn lemon juice
  • salt to taste
  • olive or vegetable oil
  • cilantro to garnish(optional)
Simple steps to cook:
Peel bottle gourd, potato and cut into cubes as shown in the picture.

Heat oil in the pressure cooker. Add cumin, mustard seeds after they are spluttered put dry red chilly in a medium flame.

Put onions and fry it until onions turn to golden brown color.

Now add tomatoes fry it for 3 minutes and leave it until oil is separated from the tomatoes.

Add potatoes and fry it for 5-7 minutes, after that put bottle gourd, peas and stir it. 

Put ginger-garlic paste, salt, all the above mentioned spices and stir it nicely for next 5 minutes

Add 1.5 cups of warm water and cover the lid of pressure cooker. 



After you hear 2 whistle from the cooker. Turn off the flame and let the pressure disappear naturally.

Open the cover of cooker, add lemon juice and you can also add cilantro on top if you like.

Finally delicious bottle gourd is ready to be served with rice, roti or naan.
