Massaman curry is one the delicious Thai curry. This curry is flavorful as it is cooked from different spices. It has distinct sour-sweet taste. You can enjoy this dish by making at home. Below is the recipe.
Ingredients
2 pound chicken chopped2 potatoes chopped
1/2 cup roasted peanut
5 crushed garlic
2 onions cut into wedges
1 cup chicken broth
1 cup coconut milk
1 cup massaman curry paste
3 cinnamon Sticks
2 tbspn cornflour mix with 1 cup of water
olive oil or vegetable oil
salt to taste
Instructions
Heat the pressure cooker and add oil. After few minutes of heating the oil add onions and crushed garlic. Saute it for 4 minutes in medium flame. After turning to golden brown color remove it in a separate plate.
Wash cooker with warm water. Heat oil, add chicken, fry it until chicken turns to brown color and remove it in another plate.
Add back the cooked chicken into the cooker, massaman curry paste, fried onions, chicken broth, coconut milk, cinnamon sticks, potatoes, salt and stir it well.
Put 2 cups of warm water, cover the lid and cook in medium flame.
After you hear 2 whistle from the cooker, close the gas and let air pass away naturally from the cooker.
After air is completely gone from cooker, remove the lid and add cornflour paste, roasted peanuts and lemon. Cook it until curry boils.
Finally, mouth watering massaman curry is ready to be served with rice, roti or naan.
Note: This curry will taste good with other meat or tofu as well. For vegetarians, tofu massaman curry can be the best option.
